Cassia Cinnamon has been a popular and prized spice for thousands of years. Cinnamon trees are native to Sri Lanka and India and thrive in rainforest-like environments. The rough inner bark of the trees is stripped and dried to produce cinnamon as we know it, in strips, chips or powder. Cassia cinnamon plants can be used to make cassia oil, which is used heavily in flavoring sodas, baked goods and liqueurs.

Cinnamomum burmanii is sweet and mellow in flavor and is excellent for baking. We suggest steeping the fragrant chips into cinnamon bark tea, blending them with fresh coffee ground or flavoring your favorite confections.

Evelyn ★★★★★

I tossed a few chips straight into my tea and the warm, woodsy aroma came through just like the rainforest origin suggests. The bark pieces keep their potency for a long time, which is exactly what I needed for steady digestive support.

The bark chips are coarser than the ground stuff I'm used to, but that's exactly what I wanted for steeping. I've been adding them to my evening tea and the scent alone signals my digestion it's time to wind down.

Boiling a few chips with my morning tea gives it a deep, spicy warmth that lasts through the whole mug, and the rough bark pieces hold up well to multiple steeps. For the price, the loose-leaf quantity is generous, though I do have to crumble the bigger chunks to get the most out of them.
